Rhubarb, Ginger and Lime Cordial

It's rhubarb season! And not only can you eat it, but also prepare lovely drinks with it!



For half a liter

300 g caster sugar
300 ml water
Peel and juice of 1 unwaxed lime
450 g rhubarb, washed, trimmed and chopped into 2cm pieces
1 thumb-sized piece of fresh ginger, peeled and cut into thin slices


Put the sugar and water in a large saucepan and bring to a simmer on low-medium heat.

Add the lime juice and zest, rhubarb and ginger and gently cook until the rhubarb starts to fall apart.

Pour the mixture through a sieve lined with muslin into a clean heatproof jug, then transfer to sterilized bottles. Keeps in the fridge for up to one month.

To serve, mix about 50 ml of the cordial with 300 ml sparkling water or soda over ice and garnish with lime slices and fresh ginger.
