If your garden is full of plums… bake a plum cake! Deliciously soft and tasty.
For 8 people
50 grams of oatmeal
50 grams of mixed nuts
50 grams of spelt flour
2 tsp baking powder
100 grams of cane sugar
150 grams of butter
pinch of salt
powdered sugar (optional)
Preheat the oven to 170 degrees. Grease a cake tin of 26 cm and cover it with baking paper.
Grind the oatmeal and nuts into a fine flour in the hand blender tray (or in another food processor).
Mix in the spelt flour, baking powder and salt and set aside.
Beat the butter together with the sugar to a light mass. If it looks a bit whitish, add the eggs one by one. It may look like it's going to separate, but it will be all right!
Then mix in parts the dry mixture until it is a smooth batter, and put it in the cake tin, spreading it evenly.
Cut the plums into quarters. Divide over the cake with the cutting edge facing up.
Bake for about 35 minutes (each oven bakes differently, so always check with a stick).
Let it cool for about 5-10 minutes and then divide the icing sugar over the cake. It's best to let it cool down completely so that it doesn't melt, but it's even nicer when it's warm!
