An easy way to prepare some small yet delicious veggie snacks!

Serves 4 people
400 gr of courgette
200 gr of flour
200 ml of water
2 gr of active dry yeast
3/4 tsp salt
Grate your courgette and add the salt. Let it rest on a strainer for 30 min until all the water comes out.
Mix the flour with the dry yeast. Mix the water and the salt together, adding it slowly to the flour and yeast mix Then finally add the grated courgette to the dough, and let it rest for 15 minutes.
Heat up the frying oil in a pan, you need enough oil to completely cover your fritters. You will know if the oil is ready when you spoon a bit of the mix in it, and it floats.
Take a full spoonful of the mixture and gently pour it in the oil. Let it cook until brown. You can cook a few fritters at the time, just make sure they have enough space to cook apart.
Let them rest on a piece of kitchen towel to soak up some of the excess oil before serving.
