Blackberry Clafouti

Treat yourself with a delicious pie, and remember — everything gets better with a bit of whipped cream!



For 4-6 servings

300 g blackberries
½ dl of cane sugar
2 1/2 dl milk
4 eggs
1 scraped out vanilla bean, the seeds, or ½ tsp genuine vanilla powder
zest of 1 organic lemon
4 tablespoons of wheat flour
1 pinch salt

For serving

Lightly whipped cream


Put the oven to 225°. Butter an ovenproof pan. Put the berries in the mold and sprinkle with the sugar.

Whisk the milk and the eggs together, and add the vanilla seeds and the lemon zest. slowly whisk in the flour, to a lump-free batter. Add the salt and pour the batter into the pan.

Bake for about 20 minutes until the clafouti puffs up and is golden.

Serve lukewarm with lightly whipped cream.
